Titan Pokemon are enormous variants of Pokemon which are tasked to guard the rare Herba Mystica in the Path of Legends storyline in Pokemon Scarlet and Violet (SV). Although they cannot be caught in that form, you can catch these mysterious Pokemon in their base forms. Read on for more information on how to catch Titan Pokemon and the benefits.

You will not be able to catch the Titan Pokemon during your first encounter with them in Path of Legends
Path of Legends Story Guide
If you return to the location where you first encountered the Titan afterwards, you'll be able to find them there ready for a rematch, during which the Titan can be caught. When you talk to the Titan Pokemon it will once again engage in a battle with you. Make sure you are prepared to battle and catch the Titan before you initiate the conversation.
If you defeat the Titan Pokemon during your rematch, it will stop respawning. Be careful not to accidentally knock it out during your second battle.

When you catch a Titan Pokemon it comes with the Titan Mark. When it is in your party you can select this Mark from its summary screen. When this Mark is selected and you send this Pokemon out to battle it will have the suffix 'the Former Titan' added to its name.

If you talk to the girl standing in front of the flower shop to the West of Mesagoza City she will check your Pokemon's size. If you show her a Titan Pokemon she will place the Jumbo Mark on it. When this Mark is selected and you send this Pokemon out to battle it will have the suffix 'The Great' added to its name.
Unfortunately, as with all of the other static encounter in the game, such as the Starter Pokemon and Legendaries, the Titan Pokemon are shiny locked. This includes your second encounter with them in their regular sized form, so unfortunately you will not be able to shiny hunt for a shiny former Titan.

Tatsugiri is in the exact same place that you had to first interact with him to start the false dragon titan battle, sitting on the edge of that island.

There is no Dondozo one, the Tatsugiri was the actual titan and the Dondozo was just it's partner it was working through, at least I have not seen a Dondozo myself and the reasoning of the Tatsugiri was the actual titan seems reasonable enough to me as to why there wouldn't be a Dondozo out there.
