The easiest way to catch a Leafeon in the wild is to find the wild Grass Tera-type Leafeon on the mountainous area west of Los Platos in South Province (Area Four).

Note that this particular Tera-type Pokemon is at Level 50, so you may need your Pokemon to be around the same level to weaken and capture it.

Leafeon can be found around Casseroya Lake and West Province (Area Three). However, it is not recommended to directly catch it due to its rare appearance. Catch an Eevee instead and evolve it into a Leafeon using a Leaf Stone.

Leafeon works best as a physical attacker, so an Adamant nature is recommended, especially for those who want to use Leafeon to clear the game's story. A Jolly nature is best for those who always want to attack first.

Prioritizing Defense Also has Merit

Leafeon's Defense stat is even higher than its Attack, making a Leafeon helpful as a defensive support. Take note however that Leafeon's HP and Sp. Def is rather low so using Leafeon in a defensive manner requires careful planning and prediction.
