In Cydonia, you can find a statue called Face on Mars. Interacting with it describes that the face is not real but people made a statue out of it due to its mythical status.
This is a reference to a photo of a taken by NASA's Viking 1 orbiter in 1976 which resembled a human face, but later photos showed that the face is simply a rock formation.

Many of Starfield's quests are connected to other quests usually in the form of a foreshadowing.
One of the logs at the Kreet Research Base mentions that there seems to be a connection between the Heatleeches and Terrormorphs. This foreshadows the true nature of the two species during the Hostile Intelligence quest in UC Vanguard questline.

There is a note in The Eye staryard which is dedicated to Alex Hay, a fan who unfortunately passed away before the game's release date.
Bethesda has a tradition of including tributes to longtime fans of the games who pass away before the games' release. In Elder Scrolls V: Skyrim, a companion named Erik the Slayer is named after a fan who was given a tour of the studio as part of his final wish. He passed away six months before Skyrim's release date.
The Monster Costume that you can get from Dr. Guiliana Lakota in New Homestead is based on a real-life animal called Tardigrade.
