If you've been following the introductory mission in Starfield, Jemison Mercantile will be the very first vendor you may visit to sell your any type of item. This shop is located beside the fountain in New Atlantis right after the first time you land on its space port.
Major cities like Akila and New Atlantis will have plenty of shops and NPCs you can sell to. Most, if not all, shops will buy any item from you as long as they have enough Credits for it.
The first major city you will visit in the game is New Atlantis on the planet Jemison. This is a major shopping hub where you can find plenty of vendors buying and selling a large variety of items.

The Trade Authority can be found at plenty of space stations and major city planets throughout the galaxy. There you can sell anything to them, even stolen items and contrabands. If you plan on smuggling illegal goods, then selling it to the Trade Authority would be your best bet.
Buy and sell ships as well as other ship-related items at space ports by talking to the ship services technician. You can also sell enemy ships you have hijacked while out in space. You can find these technicians near the landing pad next to your ship.
Staryards are stopovers or space stations near the orbits of planets where you can dock and purchase ships. Similar to that of Space Ports, you can buy and sell ships, ship parts, and ship mods.
Players can view the value of their ships, ship parts, and mods you attached in the ship building menu when you talk to a ship services technician.
You can scan planets for their resources, fauna, and extraterrestrial life. When you complete a survey data, you can sell them to Vladimir at the Eye, a space station on the orbit of planet Jemison.
You can hail (A Button), and trade with other space-travelers while you orbit planets. Although, many other spaceships do not carry a lot of Credits with them, so you can only sell a handful of items with them at a time.
The economy is fixed, but prices of bought and sold good can change based on the Skills you choose.

The buy and sell value of items in Starfield is fixed and can only be changed via Skill selection.
Credits are used to purchase and upgrade your artillery in Starfield. You can collect Credits by picking up items left lying around, defeating enemies, or scrapping junk.
You can find out an item's value, their worth in Credits, from the Inventory.
You can trade with travelers passing by in space, so it's highly likely that you can find rare resources, compounds, armor, and the like by exploring as much as you can.
