Fishing in MH Rise isn't complicated at all! You just need to find the Fishing Spots in any locale (each locale has three) and interact with it. Make sure the fish you want is available in that spot.
Then you will need to wait for your bait to go underwater (meaning the fish has bitten) and press your interact button again. Then voila, you should have gotten your catch!
Some fishes are used as tool for hunts! A couple of examples are Whetfish and Great Whetfish. These fishes restore sharpness to maximum much quicker than Whetstones do.
Some fishes are also used as crafting ingredients for bombs. If you're a sleep-bomber, you should look for a stable source of Combustunas!

Some fishes can be caught and sold in the market for a good chunk of money! Though not reliable, this could be an income source if you like fishing.

Some fishes are also forging materials for Armor and Weapons, the most notable of which is the Vaik Set! If you're planning on building this armor, then get fishing!
