The Rime Beetles can be found in multiple areas of the Iceshard Cliffs. They're not too hard to find as their icons show up in the map and minimap.

Rime Beetles gather up snow. They are limited to cold habitats and are more tolerant of cold than other insects. They can be found at any time of day on any weather conditions.

Remember to Use Your Capture Net
If you want to capture the Rime Beetle, make sure you have your Capture Net equipped. Don't interact with it as a gatherable or use your Slinger at it, as it will give you Frostburst ammo instead.
Set Rime Beetles as Waypoints on the Map
If you can't find any nearby, remember you can use filters on your map to find them. Once you see their icons, you can set them as Waypoints so your Scoutflies can guide you there.

Gathering Rime Beetles Gives Frostburst Ammo
Gathering or using your Slinger on a Rime Beetle will give you Frostburst Slinger Ammo. This ammo deals ice damage against anything you shoot it at.
