The best status effect to apply is Stun, as the status's easy application method plus the period of immobility on monsters it provides is invaluable for Hunters.
The best status to use is Stun or K.O. not only because it immobilizes monsters, but also because of how available it is compared to the other statuses. This is because you can Stun monsters simply by dealing enough Blunt damage to the monster's head. As long as your weapon deals Blunt damage, you can Stun a monster.
Examples of weapons that deal Blunt damage are the Hammer and the Hunting Horn, although other weapons like the Great Sword and Sword & Shield have moves that can deal Blunt damage despite being primarily Sever weapons.
The second best status to use on a monster is Paralysis, as it immobilizes the target for a short while. Hunters can freely abuse this window to launch their strongest attacks and cause lots of damage without fear of retaliation.
The next best status is Sleep. A monster that falls asleep will enter slumber and become inactive, while also taking increased damage from the first attack that wakes it up.
Though only one attack can land before it wakes up, players can still use the time it spends asleep to recover or prepare things like Bomb Barrels and traps. Bring a weapon with a strong one-hit attack such as the Great Sword and Hammer.
Fourth on this list is the Blastblight status. When activated, it deals a burst of damage to the monster. This gives extra damage that can be activated quickly, while also potentially flinching the monster. Sadly, outside of the extra damage, it does not do anything else.

Poison is the fifth best status to use on a monster. It will continuously damage the monster, and in some cases in previous games, impede attacks and abilities from that monster. Poison works great with skills like Foray.
Last on the list is Exhaust. While it does not forcefully immobilize a monster, it still slows their movements and attacks, giving Hunters more room to deal with an Exhausted Monster.
Status Effects are ailments that negatively affect their target. The above statuses are applicable to both monsters and Hunters, but the latter can cleanse the statuses by using certain items.
