Fishing: Life, in Microcosm is unlocked during Chapter 1, after you have completed the Forest Findings mission.
This is an Introductory to the games fishing mechanic, meet Kanya in the Scarlet Forest Basecamp Fishing spot and learn about fishing. There are plenty of bodies of water in the Easternland, the only exception being Wounded Hollow. You will be able to catch fish with the fishing rod at fishing spots scattered throughout each region.

Seeking the Golden Fish is unlocked when you reach Chapter 4 and have completed the Fishing: Life, in Microcosm mission.
You can only catch Goldenfish using the Golden Bughead bait that Kanya gives you at the start of this mission. This fish prefers dark areas away from the sun.

Fishing for Flavor is unlocked after completing the Seeking the Golden Fish mission. You can catch the Gravid Bowfin using the Emerald Jitterbait when the weather is Plenty during dawn or dusk. Make sure to jig the line by moving the bait to lure the fish into biting!
Note that you can change the weather and time by resting in your tent. Once you've set your weather to plenty check the fishing spot for an orange fish.

The Catch of a Lifetime is unlocked after completing the Fishing for Flavor mission. This mission will require you capture a whopper using the new fishing bait that Kanya will give you: Tuff Joint Bait and Duster Jig. The Tuff Joint Bait is the bait used to catch large swift fish like the Gatronome Tuna, while the Duster Jig is good for catching fish in murky water like the Gajau.

Whopper Fish are large fish type in the game. Any fish that is notably big is considered as a Whopper Fish and these fishes are usually caught in deep water fishing spots. Most of them will bite your bait if you slowly reel in your line near them.
Aside from the need to use the Tuff Joint Bait and Duster Jig, catching a whopper also comes with a special mechanic. Once a whopper bites, you'll need to tire it out by moving your control inputs in the direction it's swimming in. Once the whopper is tired out, start reeling it towards you! Forcing to reel in the catch will only break the line and will cause you to lose the fish.

Razzle Dazzle is unlocked after you complete the The Catch of a Lifetime mission. At the start of the mission, Kanya will provide you with a Tentacle Jig Bait. You will need this to catch a Grand Escunite. The fishing spot in Scarlet Forest Area 8 is in a cave hidden beneath some waterfalls.
You can easily spot the Grand Escunite because of its bright blue color. Jig the line up and down to tempt the creature into biting.

Kanya's fishing questline unlocks after you complete Forest Findings in Chapter 1. This introduces you to the different fishing rod mechanics and aquatic life of Monster Hunter Wilds.
