Equipping armor or weapons can provide you with different skills. Each weapon and armor will have differing skills whether for improving attack performance or survivability, and it's up to you to choose which skills fit your playstyle.
Skills that affect weapons, such as Speed Sharpening or Critical Eye, are considered Weapon Skills and will be found on weapons, while skills that provide other passive effects, such as Speed Eating, will remain as Armor Skills.
Additionally, you will not lose skills whenever you upgrade weapons in the same Weapon Tree. Skills can only be upgraded or added as you go down a weapon's upgrade path.

Food Skills are obtained by eating meals. The ingredients that you use to make your meals contain the food skills. Always cook and eat a meal before hunting monsters to get useful buffs!
To make meals and get Food Skills, just go to your tent, select BBQ Menu, and choose either of the options.
Decorations can be slotted into weapons and armor to provide new skills or improve existing ones. These can be obtained from Orbs as a reward for doing quests.
