Cutting a monster's tail off in Monster Hunter WIlds gives additional drops and usually weakens them in the process. Learn more about how to cut off a monster's tail, as well as what drops you can get from them here.

To cut a monster's tail off, you must deal enough Sever damage to it while fighting it. Once you deal enough Sever damage to the tail, it should fall right off, with a notification showing in the side that you severed the tail.

Although they are primarily Shot weapons, the Light Bowgun and Heavy Bowgun can also cut off monster tails by using Slicing Ammo.
If going this route, however, make sure to bring Slicing Ammo materials so that you can craft on the field when you run out of ammo instead of returning to camp and refilling.
After cutting a monster's tail off, you can go up to it and carve it once or twice (depending on the monster's size) to get some extra materials. Not only that, but there were cases in previous games were cutting a monster's tail off gave you extra chances to get rare items.
Other than getting additional rewards, some monsters are permanently weakened when you cut their tail off. For example, the Rathalos loses its ability to poison you with its tail once you cut it off. It also shortens the effective range of its Tail Whip attack.
This makes fights against monsters easier, especially if its tail attacks are hard to deal with.
