Extreme climate can affect your character by depleting your health or even your stamina overtime in Monster Hunter Wilds. See all of the climate effects and what they are here!

Hunting in Hot Climates will slowly deplete your health! You can tell a location is too hot for your character if there are a lot of embers flying around. Be sure to check your health whenever you can by then as there's a chance you may notice the negative effects too late.
While similar, the effects of being in an extremely hot environment is different from Fireblight! The latter will only happen if you get hit by too many Flame Elemental attacks.

Cold climates will deplete your stamina faster. You can easily tell that the location will be too cold for your character if there are a lot of icicles around.
This is also different from Waterblight, which happens when you get hit by Water Elemental attacks too many times.

You can immediately counter the hot climate by drinking Cool Drinks, which can be crafted with the Chillmantle Bug. Hot Drinks will also save you in cold climates, so be sure to craft them using Hot Peppers when you can!

You can cook and eat a meal that has the Sizzling Meal effect before the hunt. Sizzling Meals negate the effects of hot and cold climates, on top of increasing your defense in these specific areas.
It's important to remember that you can easily get this food skill by adding Monster Chili as the last ingredient in your meal!

There are endemic life creatures you can find in the wild that can help you in extreme climates. One such example would be the Heatmantle Bugs, which help you combat the cold.
