To unlock The Gardener, you must have completed the previous subquest of Paralogism, The Hunger of Many!

The Gardener Walkthrough
Talk to Alice
Head over to the Imaginarium Theater and to talk to Alice, who is in the form of Dodoco sitting at the table. Albedo explains to Alice that he intends to kill evil Durin in Dragonspine.
Then, Alice listens to what Albedo is planning and advises while considering every possible outcome. At the end of the conversation, Alice shrinks you and Albedo into chess-size pieces and teleports you to the chessboard.
Accept the Hexenzirkel's Trial
During the first phase of the trial, Alice challenges you to defeat the two chess game pieces, the King and Queen piece. Both the chess pieces can be defeated quickly with the use of the pawns on the chessboard.
For the second phase of the trial, Barbeloth replaces Alice and spawns The Game Before the Gate weekly boss for you to defeat. It will be fairly easy to defeat, however, their attacks could be fatal if you get hit.

Go to Dragonspine
Go to Dragonspine, where Durin's heart is located at Wyrmrest Valley. Once at the location, Albedo goes to work and starts executing his plan to defeat Durin.
Dragonspine Map and Unlock Guide
Return to Mondstadt
On the way back to Mondstadt, before reaching the bridge to the main city, Albedo stops and gives his thanks to you for accompanying him to Dragonspine. Afterward, you have to wait for two days for the Windblume Festival.
Go to the Plaza
Go to the plaza inside the main city of Mondstadt, where Venti's statue is located. A lengthy cutscene will occur afterward, where you will see the celebration of the Windblume Festival and the rise of the true Durin.
