The best way to beat Ninianne of the Lake is to bring Dendro and Electro characters to create Hyperbloom reactions. Since Vivianne being constantly affected by Hydro, you don't need a character in that element to fight it with.

Bring a Healer or Shielder
Ninianne of the Lake hits very hard and its attacks can easily take down one of your characters, so make sure to bring a character that can heal or a shielder like Zhongli.

Formidable boss, but you don't *have* to have electro or dendro to defeat it, but it does make it easier. I ran Lynette, Xiangling, Bennett and Xingqiu (I didn't know it was hydro resistant when I found it) and I was able to win, only lost Bennett once early in the fight and that was it.
