Similar to Ganyu's overworld build, your best choice is to use her standard DPS build to beat her Envisaged Echoes challenge.
You can opt to forego any Elemental Mastery stats and slot entirely into CRIT and Energy Recharge, as Ganyu will be reliant on only her own damage and the frequency of her Elemental Burst.

As far as Charged Attack bows go, The First Great Magic offers Ganyu the most amount of benefits and is the overall best option.
However, Ganyu can already see success just using a F2P weapon like Prototype Crescent due to the scalings of her Charged Attacks.

Due to the presence of the Frozen reaction in this challenge, you can use Ganyu's main Artifact Set of Blizzard Strayer to provide as much as 40% CRIT Rate against the Frozen enemies in Phase II.

Ganyu benefits the most from stacking CRIT and Energy Recharge to maximize her damage and the uptime of her Elemental Burst in order to reliably keep enemies Frozen.
The first part of this Envisaged Echoes challenge requires Ganyu to destroy 9 targets using only 3 Normal or Charged Attacks.
Aim at the center target and wait for them to converge before letting out your shot. This should take out around 7 of them, allowing you to finish off the last 2 targets with 2 separate Normal or Charged Attacks.
Phase II will feature three Xuanwen Beasts and 85 seconds to kill all three. This is a straightforward DPS check that requires Ganyu to dish out personal damage and Cryo application.
At the start of the fight, let the Xuanwen Beasts get close, then use your Elemental Skill to create space and lock them down in place with Ganyu's Charged Attacks and Elemental Burst.
The arena contains a persistent zone that applies Hydro to any enemies in the area, allowing you to perma-freeze the Xuanwen Beasts, making this less of a matter of survivability and more of a static DPS check.
