The Pokemon in this deck all have a weakness against Grass-type Pokemon. If you use Grass-type Pokemon that are quick to set up and can attack almost immediately, you can quickly get the advantage in the game.
A really good counter card would be Decidueye ex. With the help of Rare Candy, you can evolve Rowlet to Decidueye ex without needing its Stage 1. Both of its moves cost only 2 energy, so it can attack almost immediately.
Decidueye ex can also snipe down any injured Pokemon on the opponent's Bench using Pierce the Pain.

Umbreon can only prevent Basic Pokemon from attacking. It can be countered easily by decks that use evolved Pokemon.

Healing your Pokemon of damage can keep Umbreon ex from using Dark Chase to force it into the Active Spot. Shaymin can offer incremental healing and keep your Pokemon healthy enough to avoid getting gusted or KOd by Umbreon ex.

Mismagius ex can go into the front line while Giratina ex sets up in the Bench.
Mismagius ex is an evolved Pokemon with a low attack cost, so it doesn't get affected by Umbreon's Dark Binding. After defeating Umbreon with Mismagius ex, you can switch in Giratina ex to deal with Darkrai ex and Umbreon ex.
Both Giratina ex and Mismagius ex have low retreat costs so they can be maneuvered easily out of the Active Spot without being trapped by Umbreon ex's Dark Chase.

Tsareena and Meowscarada both function as Energy-efficient single-point attackers. Tsareena can potentially use Three Kick Combo in earlier turns if evolved with the Rare Candy.
Meowscarada is a great counter to ex Pokemon. Since it can deal damage more consistently than Tsareena, it may be a reliable finisher as well.
