Immersive Cards are rare cards that offer, quite literally, a deeper look behind the illustrations of the card.
Holding these kinds of cards while viewing it will remove the border and zoom into the card's visuals, immersing the viewer with the scene.

Do note that even though Immersive Cards have special looks, they still function as the same card as their more common counterparts when used in play. There are no in-battle benefits of using Immersive Cards other than looking cool!
For example, the two Mewtwo ex cards above both have the same HP, type, weakness and resistance cost, moves, and energy requirements per move.
Immersive Cards have a rarity of three stars, making them one of the rarer ones within a set and can be seen as chase cards, which means that these are the highly-sought after cards of the set.
These cards also match the Pokemon displayed on the booster packs of the set. For example, both Pikachu and Mewtwo are featured in Genetic Apex' booster packs, which means that Charizard may also have its own immersive card.
