You can get more Berries by shaking a tree multiple times. However, the more you shake it, the higher the possibility that Pokemon will fall from the tree and challenge you into a battle.
It would also mean that the chances of getting Berries will decrease.

Kee Berry Competitive Analysis
The Kee Berry has the effect of raising the holder's Defense by one stage after being hit by a physical attack. This can be effective for physically defensive and stall teams to use, but otherwise remains to be niche since there are better moves such as Iron Defense (TR46) that provide a better effect.
