You can get Colbur Berry by shaking Berry trees found in Wild Areas and Routes.

You can get more Berries by shaking a tree multiple times. However, the more you shake it, the higher the possibility that Pokemon will fall from the tree and challenge you into a battle.
It would also mean that the chances of getting Berries will decrease.

How to Win Max Raid Battles
The Colbur Berry has the effect of lessening the damage of a supereffective Dark-type Move. This can be useful for Psychic-type Pokemon used in the current meta in lessening the impact of Dark-type moves.
An example user of this includes Indeedee-F as a psychic utility type often used in doubles format.
