You can use Parry to punish your enemy that is using an unsafe combo. This effectively further agression, giving you space to breathe if they choose to stop attacking.
If they continue their attacks, continue parrying to deplete their Qi Bar, and punish them with an Execute once you deplete their Qi.
You can parry the first strike and the next few attacks of some weapon combos. However, some weapons have an attack sequence that cannot be completely parried because the next attack comes before the previous parry animation finishes.
In that situation, you can choose to dodge or to block the next attack, after parrying the first few attacks. This will give you a moderate Qi advantage, that you can leverage during the fight.
You can use Parry to feint attacks, utilize animation canceling, and bait a reaction from your enemy, which you can then take advantage of. Depending on the situation, you can either parry their next attack or retaliate with a combo of your own.

One of the best tips when you are unsure about the parry timing is to hold the block button while pressing the parry key. This way, if you miss the parry window, the incoming attack will be blocked, reducing the damage you would otherwise have received. However, be on the lookout for red glint attacks as these are unblockable and will break through your defense!
Parrying is not limited to the direction you are facing. This means you can press the parry button even if the incoming attack is behind your character, which is helpful when fighting multiple enemies or bosses that can disappear.
There are multiple enemies in the game that have incredibly fast attack patterns. For these specific moves, you can spam the parry button. Most of the time, you will be able to parry the move, as the window can be forgiving.

On Story or Recommended mode, you have the option to activate Parry Assist in your settings menu. When activated, every time an enemy attacks you, time will slow down and a prompt will appear to help you parry the attack. Do note that there is a limit to these assists, which can be identified by the small bars underneath your Qi Meter.
You can deplete the enemy Qi Bar efficiently by parrying their attacks. If their Qi drops to zero, they will enter the Exhausted state, where you can Execute them to deal significant damage. Make sure to weave in more attacks before Executing them to take full advantage of the damage window.

To parry attacks, simply press the E button or R1 on the controller (on Default Settings) before the attack hits your character. You can parry all enemy attacks, even ranged ones, except for moves that have a yellow glint at the start of their animation, which means those attacks can only be dodged.
It is also important to note that the parry button is different from the block button, unlike in some games where they are usually the same.
Attacks that have a red glint at their wind-up animation will deal counter damage to enemies when parried successfully. The key is to wait for the glint to be at its brightest before pressing the button to parry perfectly.
