Besides taking on the missions listed here, you can also get Eggs simply by just logging into the game! You can get a total of 800 Eggs at the end of the 10-day log-in event so don't forget to claim them!
The only place where you can use Eggs is in Egg Exchange. You can find it under the Egg Event tab!
The fastest way to finish all the event missions is to participate in ranked matches. Participating in one or two Ranked Matches makes it possible for you to finish all the missions in one go.
