Check your Pokemon's IVs and EVs using the Judge Function through the Summary screen in Pokemon Legends: Z-A. Learn more about Individual and Effort Values, as well as how to check them here!

The only way to check your Pokemon's IVs is to use the Judge Function, which gauges how good your Pokemon's IVs are for each of the six stats: HP, Attack, Defense, Special Attack, Special Defense, and Speed. However, the Judge Function is only unlocked after you finish the game.

These ratings show the range of a Pokemon's IVs. If you want to improve your Pokemon's IVs, you can use Hyper Training, which is also unlocked after beating the game.
Hyper Training Guide: How to Increase IVs

To check your Pokemon's EVs, you can open the menu, select one of your Pokemon, and choose Check summary. Afterward, you'll find the Stats section right below your Pokemon's Moves section. EVs can also be improved through EV training methods, such as giving your Pokemon Vitamins.
Individual Values (IVs) are a Pokemon's innate stats, and these values usually cannot be changed once a Pokemon has been caught or hatched.
On the other hand, Effort Values (EVs) are stats that you can grow as your Pokemon levels up. Specificaly, defeating a specific Pokemon gives your Pokemon EVs that will help increase one of your Pokemon's six stats.
