The player's gender and starter Pokemon cannot be changed, and Rank Up Battles cannot be replayed in Pokemon Legends: Z-A. See the list of choices, missables, and one-time events in the game here!

When you choose your character's gender, you cannot change it afterward. However, you can change your clothing and hairstyle at Lumiose City's boutique and hair salon, respectively.

Your character's gender also decides who your rival will be throughout the game. Specifically, Taunie is the rival for a male character or Urbain for a female character.
Urbain/Taunie Character Profile

Like previous Pokemon games, you can only choose one starter Pokemon at the beginning of the game. Additionally, the game autosaves after the first Battle, so choose your starter carefully!
Due to the game's Autosave function, you cannot easily soft reset your starter choice to either roll a beneficial Nature, or attempt to start with a Shiny starter.
If your starter gets a different nature than the one you want, you can change its nature later on using Mints.

Additionally, in the Side Mission A Call from Mable, you are given the choice to obtain one of the classic Kanto starters: Bulbasaur, Charizard, or Squirtle.
A Call from Mable Side Mission

Similar to your character's gender, you also cannot change your character's birthday once you set it. However, if you visit a Pokemon Center on your birthday, you will receive an item as a gift!

Once you win in a Rank Up Battle, you cannot replay that battle afterward. However, you can challenge the trainer again if you lose.

In Main Mission 38, you can only choose one wish when you reach Rank A. The first two choices result in similar results as they both progress the dialogue, while the third choice results in unique dialogue from Vinnie and returns you back to the Wish selection.
Choosing the first choice, I want us all to battle Pokemon together!, will allow you to progress the game and expereince all the post game content!
What to Wish For: Rank A Wish Choice Guide

During Main Mission 20 you have a chance to catch a Gengar. Usually, main mission pokemon encounters end when you knock out said pokemon. I noticed too late that you can catch it.

There are some side missions where you can make a decision to catch a pokemon or not. One of them is the Diggersby at the holovator. Can't remember the others. There is also one side mission where you can choose to get an alpha or not, and that decision cannot be changed.
