Visiting Pokemon Centers unlocks them as Travel Spots which you can fast travel to later. Unvisited Pokemon Centers will appear as gray Poke Ball symbols in the map.
Once you've visited a Pokemon Center, you can hover over it with the cursor to select it and fast travel to it.

After visiting a Pokemon Center early on, the nurse will ask you if you want to register your birthday. This allows you to get special greeting when you play during the day that you registered.

You can ask the nurses in Pokemon Centers to restore your entire Pokemon team's HP to full and cure any lingering status effects.
These locations can also serve as spawn points after your whole team is wiped in battle.
