There are several useful NPCs and places you can visit who can help you with EV training your Pokemon and adjusting their stats.
If you want to start training stronger Pokemon, it is recommended that you get the Blue Canari Plush to improve your chances of catching higher level Pokemon. After completing the game, you can then level grind by defeating Alpha Pokemon in Wild Zone 20.

For more Defensive stats, the Magenta Sector 6 stalls should have all of the mints you need.
