A Sky Battle, for Old Times' Sake can be unlocked by progressing Main Mission 20: A Request from the Rust Syndicate, specifically after defeating the set of Rogue Megas. The Rogue Megas you need to defeat are Mawile, Barbaracle, and Ampharos.

A Sky Battle, for Old Times' Sake can be started by talking to Volli on Magenta Street, near Saison Canal. You can fast travel to the Magenta Pokemon Center for a closer starting point, then make your way east to the Holovator, as Volli will be on a rooftop.

To reach Volli, take the Holovator up to the rooftop. You can find this Holovator just east of the Pokemon Center.
At the top, clear the Mega Shards before the bridge if you haven’t yet, then cross it. Volli should be on the other side.

Upon accepting the side mission, you’ll be given time to prepare for a team of Flying-type Pokemon. Since you’re going against Flying types, consider a team that also covers the type's weaknesses to Rock, Ice, and Electric.
You can bring as many as you like, as long as they all share the Flying typing. It’s also better if you form a team around level 45–50 to make the fight easier.

The best Pokemon to bring for this fight are Gyarados and Aerodactyl. Gyarados can learn Ice Fang, which easily targets Noibat's and Altaria's 4x weakness to Ice, and it also resists Talonflame's Fire-type moves.
It can also learn several Water and Dragon-type moves that can target secondary weaknesses, such as Talonflame's weakness to Water and the two Dragons' weakness to the same type.
Aerodactyl is another great option, as it can also learn Ice Fang via TM. Additionally, it can use several Rock-type moves such as Rock Blast, Stone Edge, and Rock Slide, allowing it to cover all of Volli's team's weaknesses.

Once you have a team of Flying-type Pokémon of your own, go ahead and challenge Volli. He'll lead with a Noibat, which you can easily defeat if you have Ice-type moves. Talonflame can also be defeated quickly if you target its 4x weakness to Rock, and Altaria has the same 4x weakness to Ice as Noibat.
Avoid bringing Electric-type Pokemon or using moves of this type, as two of the Dragons will reduce the weakness to normal damage, making Electric moves effective only against Talonflame.

Sharp Beak, when held by a Pokemon, boosts the damage of Flying-type moves, while Power Anklet can help you with EV training speed at the cost of lowering your Speed during battle.
