Head to the Museum and talk to Blathers, who will have a thought bubble over his head. He will tell you about Brewster, who is an experienced cafe manager and a fan of gyroids.
He will then ask you to search for Brewster, letting you know that Kapp'n may be able to help you! Blathers will also give you Brewster's Photo to help you on your search!
If Blathers is not talking about Brewster when you head to the museum, you need to meet the following unlock conditions.

Head to your island's pier and talk to Kapp'n who is in charge of the boat tours. You can only take a tour once a day and costs 1,000 Nook Miles.
How to Find Kapp'n and Ride the Boat Tours
Search for Brewster once you reach the island, who you'll find roaming around the area. Talk to him to convince him to set up his café at the Museum and get a Gyroid Fragment.
Brewster will only appear if you heard about him from Blathers first and received his photo!
Return to your island and give Blathers the good news! He'll be excited and happy to hear that Brewster is ready to set up The Roost in the museum!
Blathers will close the Museum the next day to prepare for Brewster's arrival. If you don't want to wait, you can always time travel!
On the day of Brewster's arrival, Isabelle will announce his arrival and a new addition to the museum - The Roost!

Head to Resident Services and talk to Tom Nook and celebrate the opening of The Roost!
On the 3rd day of your visit to The Roost and after ordering a cup of coffee, Brewster will allow you to purchase Takeout Coffee on the right side counter for 300 Bells.
You can drink Takeout Coffee to get energy, providing a total of 3 energy per sip.
Alternatively, you can give Takeout Coffee to your villagers as a gift!
On the 6th day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you the recipe for the Roost Sable Cookie!
On the 12th day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you some Coffee Beans!
On the 16th day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you a Cup with Saucer!
On the 21st day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you a Coffee Plant!
On the 31st day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you a Siphon!
On the 41st day of your visit to The Roost and after ordering a cup of coffee, Brewster will stop you before you leave and give you a Pro Coffee Grinder!
After your 51st day's cup of coffee, the Brewstoid Gyroid will finally be yours!
Brewster is a master coffee brewer. For 200 Bells you can order a cup of his recommended brew!
Brewster may offer to add Pigeon Milk to your brew, which will improve its creaminess and smoothness!
There's no limit to how much coffee you can drink since nothing will happen no matter how much coffee you drink, Brewster will just stare at you silently while he takes your bells.
Though we recommend that you visit The Roost once per day instead to have your daily dose of caffeine to earn rewards!
A phone in the cafe will allow you to use an amiibo card. With amiibos, you can call specific residents to come enjoy a spot of tea with you. You can even invite villagers that don't live on your island, including Special Characters!
Certain special characters may bring along company when invited to the Roost using the amiibo function. Kapp'n, for example, will invite his wife Leilani and his daugther Leila!
Island residents will sometimes show up to Roost or are already hanging out and drinking some coffee. Special Characters such as Isabelle will sometimes walk in The Roost after drinking some coffee!
If you have guests over at the island, you can have them visit the roost and share a cup of coffee with them!
You have three payment options when inviting guests over for a cup of coffee. You can either pay for all orders, seperate checks, or put it on your tab to pay later!
