By eating fruits and gaining Stamina, you can dig up Bamboo and bring them home with you from the Bamboo islands that sometimes appear on Mystery Island Tours.
The only foods available on the Bamboo islands are Coconuts and Bamboo Shoots. Since the Bamboo Shoots are rare, you might want to bring some fruits if you go searching for Bamboo.
Bamboo can be grown on your own island by planting Bamboo Shoots that grow beneath the ground next to fresh Bamboo.
You can dig up Bamboo Shoots that are buried next to Bamboos on Island Tours, or you can sometimes receive them from Daisy Mae after purchasing turnips from her.
To farm Bamboo Pieces effeciently, you first need a decent amount of fully grown Bamboo on your island, by either method above.
Once they're fully grown, you can chop them with a Stone Axe for 3 pieces of Bamboo every day, just like normal trees.
Bamboo Pieces are used as a DIY crafting item to create the item(s) shown above.
