You can get recipes, including the Pitfall Seed recipe, from your neighbors by talking to them when you see them crafting on their workbench. Visit them frequently to get recipes!
You will know if someone is home if smoke is coming out of their chimney.
Another way to get the Pitfall Seed recipe is from message bottles. Walk around your beach at least once a day to pick up a message bottle.
If you see a star shaped hole on the ground, it could most likely be a pitfall seed! After placing it in your pocket, you will automatically learn the recipe.
Note that pitfall seeds do not spawn naturally, and you can only dig them up if other players buried them. You can ask your friends for the recipe or you could try asking someone on the message boards if they have an extra pitfall seed handy!
Message Boards
You can create a pitfall by burying the seed using a shovel. Players and residents can fall in the pit upon walking over it, so be careful when doing this!
After falling, you will be stuck for a while! Press the A button repeatedly to get out. Note that you cannot learn the recipe this way.
When a resident falls in the pit, they will get themselves out regardless of whether you talk to them or not. Once getting out, they will get mad and you will not be able to talk to them for a while.
You can also have other people learn the recipe by burying pitfall seeds and have them dig the seeds up.
You can even get 600 Nook Miles just from playing around with pitfall seeds.
