Steps to catching Golden Stag will the same for bugs on trees, stumps, and rocks.
To catch a bug, you'll need to equip your net! Press the X Button to go into your pockets and select your net.
You can also select it from your Tool Ring!
The Golden Stag can fly away if you move too closely too quickly. Hold down the A Button and move the Right Stick to approach it carefully.
Once you've inched close enough, release the A Button to swing your net. You'll then be a proud owner of the Golden Stag!

Best way to get them to spawn is a mystery island, I found money rock island the best. Cut down all trees apart from the palm trees, remove all fruit, wood, weeds and flowers etc, but leave the money rocks in the middle. Then basically run in circles around the island checking each palm tree as you pass. You may need to vault into the middle to remove bugs that spawn there, and it will take many runs around but eventually they will spawn. Thank you to below, will try the creep and stop tomorrow.

This is very late but I just had the most incredible stroke of luck. I went to a nook miles island and after a long time running around and checking the palm trees I have successfully caught the three rarest and most expensive bugs: the golden stag, the horned Hercules and the giraffe stag. I didn’t know of them closing and opening mandibles as a cue or that they even look at you. It was a lot of trial and error and just carefully controlling how close I get to them. Good luck!
