Gideon Ofnir can be found at the Erdtree Sanctuary in Leyndell, Ashen Capital in the region of Altus Plateau. This is the same area where you'll have first encountered Godfrey, First Elden Lord.

Summon quick Spirit Ashes

Gideon Ofnir's slow cast times can be exploited by summoning fast Spirit Ashes such as the Avionette Soldiers. He'll have a difficult time targeting them and you'll be free to attack him from a distance. In addition, they can deal even more damage to Gideon since they can inflict Bleed.

Alternative options would be Black Knife Tiche or your Mimic Tear equipped with a melee weapon and Bloodhound's Step.

Cast large AoE spells

Gideon Ofnir's lack of mobility means he'll have a difficult time dodging spells with a large AoE. You can spam spells such as Rock Sling or even Rennala's Full Moon since his only way to avoid them will be to roll.

Use the Eternal Darkness spell

Eternal Darkness will be extremely effective in this fight since it can absorb all of Gideon Ofnir's spells, giving you ample protection. You can then use those opportunities to counterattack with your spells.

Use Bloodbone Arrows

Gideon Ofnir's weakness to Bleed means you should use Bloodbone Arrows with your bow to deal increased damage.

Equip Bloodhound's Step

With Bloodhound's Step, Gideon Ofnir will have a difficult time hitting you with his spells due to your faster dodge and you'll have an easy time closing any distance to punish him.

Use jump attacks or heavy attacks to cancel Gideon Ofnir's cast animations

Gideon Ofnir's low poise means you can easily stagger him or knock him down with enough hits. Prioritize heavy attacks when he starts using a spell like Comet Azur since the long cast time gives you the chance to cancel it and deal high damage.

Exploit Gideon Ofnir's weakness to Bleed

Use weapons such as Bloodhound's Fang to inflict Bleed on Gideon Ofnir and take away massive chunks of his health. If you don't have a Bleed weapon, you can also coat your weapon in Blood Grease.

Sir Gideon Ofnir, the All-Knowing Attack Patterns

Gideon Ofnir will attack you with various spells and incantations, and will prefer to keep his distance from you. He can also use a healing flask once you bring his health low enough. However, his minimal defensive capabilities mean you can end the fight quickly if you're constantly looking to attack him.

Glintstone Cometshard: Gideon Ofnir launches multiple tracking cometshards at you that each deal decent damage. This will be his primary form of attack. Roll to the side to avoid the shards.
Glintblade Phalanx - Sir Gideon Ofnir - Elden Ring
Glintblade Phalanx: Gideon Ofnir creates an arc of daggers that he then launches at you. Don't approach him when he casts since it'll be more difficult to avoid. Instead of rolling, keep running to the side and you won't be hit by these.
Comet Azur - Sir Gideon Ofnir - Elden Ring
Comet Azur: Gideon Ofnir charges up a comet that lasts for a few seconds and can knock you down if you're hit. This deals heavy damage, but the long cast animation means you can cancel it if you attack him in time.

Discus of Light: Gideon Ofnir launches three rings of light forward then brings them back. The safest option to avoid this is to roll backward since they occupy a wide AoE and can still hit you if you roll to the side or forward.
Faith Explosion - Sir Gideon Ofnir - Elden Ring
Faith Explosion : Gideon Ofnir creates an explosive spell that charges up the more you attack him. You can tell when this is about to burst when the ring on his chest starts lighting up. Back away immediately and be extra careful with avoiding this attack since it can one-shot you.
Black Flame Ritual - Sir Gideon Ofnir - Elden Ring
Black Flame Ritual: Gideon Ofnir creates a circle of flames around him that can quickly whittle down your health. This has a quick cast time, so roll away when he kneels and a black flame briefly lights up on his hand.
