The best strategy to fighting Pumpkin Head with a melee build is to always keep trying to get at its back. Circle around counterclockwise.

When Pumpkin Head swings down, dodge diagonally forward, so you end up behind it. Then hit it once or twice, and continue circling around. Repeat this process till Pumpkin Head dies.
