Attack its hind legs

Attack its hind legs - Deathbird - Elden Ring
It'll be difficult to strike the Deathbirds from the front due to the speed of their head and arms. Instead, focus your attacks on their hind legs since these have limited movement. It's best to attack them from the side or from behind to avoid the majority of their melee moves.

Use Torrent to weave in and out of its attack range

Use Torrent - Deathbird - Elden Ring
Staying on your horse will allow you to quickly go near the Deathbirds for a few hits then get out of their attack range before they can hit you back. Ranged users will also have an easier time in this fight since this will allow them to reposition with ease.

Be cautious about attracting nearby enemies

Since the Deathbirds are open area bosses, there's a chance that you'll get targeted by nearby enemies. This can make the fight harder since they'll interrupt you in the middle of moves and will just be a general nuisance.

Be aware of your immediate surroundings, and prioritize finishing them off first in case you do attract them.

Exploit the Deathbird's weaknesses

You can deal increased damage by taking advantage of the Deathbirds' weapon type weaknesses, namely Strike, Slash, and Holy.

If you don't have these weapon types, you can also coat yours in Holy Grease or toss Holy Water Pots at the Deathbirds.

Use Holy Water Pots

Due to its weakness to Holy damage, Holy Water Pots actually deal a lot of damage to the Deathbird. You can craft Holy Water Pots with 1 Cracked Pot, 1 Mushroom, and 1 Tarnished Golden Sunflower.
