Best Side Quests to Complete
Mount Unlock Quest
Arguably the most important Side Quest to complete is Mount: Donan's Favor, which unlocks Mounts at Stables around the world and significantly boosts your movement speed. This quest only involves interacting with NPCs and is unlocked automatically as you progress through Act 4.
Unfortunately, there's no way to access it early, but once you've progressed through Acts 1-3 and reach Act 4, be sure you don't miss this one.

Specialization Quests
Specialization Quests are quests that unlock once your character reaches Lv. 15. These quests unlock special class mechanics for your selected character, making these the best optional quests to complete.
