Unlikely to Have Demo Release
There is currently no announcement regarding the release of a demo for Pokemon Legends Arceus. The past 2 mainline Pokemon games on the Nintendo Switch have not had demo releases, and Legends Arceus is expected to follow that release formula, given the lack of announcement.
The only mainline Pokemon games on the Nintendo Switch to have a demo release were Pokemon Let's Go, Pikachu! and Let's Go, Eevee!, yet their demo release on the Nintendo eStore came months after the full games' release.

Will There Be a Beta Version?
There is currently no announcement regarding a beta version release of Pokemon Legends Arceus. It's unlikely a beta version will be released at this point, a couple weeks before the game's release date, as GameFreak would likely rather showcase a portion of the finished product via a demo release.
Additionally, no mainline Pokemon game on the Nintendo Switch has had a beta version release.
