Use Fighting-type Moves
Munchlax is a Normal-type Pokemon, which means it is weak to Fighting-type moves. Have your Pokemon use moves such as Rock Smash to deal super-effective damage to Munchlax.
Take Advantage of Fixated Status
Munchlax has the fixated status condition when using Rollout, which means it deals increased damage until the effect lasts. This also leaves it vulnerable as any damage a fixated Pokemon receives is also increased.
Try to deal as much damage as possible while it is fixated. You can use Strong Style attacks for huge damage!
Avoid Using Pokemon Weak to Rock-type Moves
Warden Mai will order Munchlax to use Rollout repeatedly, so it is best to avoid using Flying, Bug, or Fire-type Pokemon when fighting them.
If you chose Cyndaquil or Rowlet as your starter, it is wise to put them aside for now and let another Pokemon that is not vulnerable to Rollout face Munchlax.
Inflict Status Conditions
You can also try to inflict status conditions on Munchlax. You can paralyze it with certain Electric-type moves to lower its Speed stat, or it might not even move due to paralysis.
