Shellos appear differently in different areas

Shellos (West)	The pink variant of Shellos may be found in Obsidian Fieldlands. You can spot them along the coasts of Sandgem Flats, and the beaches of Ramanas Island.
Shellos (East)	The blue variant of Shellos may be found in Cobalt Coastlands. You can spot them among the Tranqulity Cove islets, and in Seagrass Haven.

Catching both forms of Shellos is part of Request 45: Shellos of the East and West. Catching one of each and showing them to Anthe will inspire her to add more clothing choices to her shop.
