During the The Final Repository main quest, you have the option to choose what to do with the repository as part of the Reach the Repository Before Ranrok objective.
It is here where the game branches off based on the dialogue choice you make. Note that the player can get the True Ending later regardless of which of the two main endings they choose.

In the Normal Ending, the main protagonist chooses to keep the secret of Ancient Magic forever and intends to keep it contained in the repository. Professor Fig stands by your side to help you as the new Keeper of Ancient Magic.
Ranrok arrives to break the seal keeping the Ancient Magic. The main protagonist defeats them to seal the magic once more. However, the fight takes a toll on Professor Fig and he passes away.
Do note that regardless of the ending you choose, Professor Fig's fate remains the same and there is no way you can save him.
In the Evil Ending, the main protagonist chooses to open the repository to wield the Ancient Magic for themselves with the intention of using it for the greater good. Professor Fig does not stop them but is unsure of their fate.
After this, the scene plays out similarly to the normal ending, with the main protagonist containing the rest of the Ancient Magic and Professor Fig passing away.
The True Ending serves as a continuation of the story after the Normal and Evil Endings. After obtaining either of the endings, the House Cup Quest will be unlocked, which simply requires the player to reach level 34 to unlock it.
The Quest simply consists of an extra cutscene plays which shows various students taking their OWLs, followed by Professor Black and Professor Weasley announcing the main protagonist's house as the winner of the House Cup thanks to their contributions during the story.

Upon finishing this quest, players will recieve The Seeker of Knowledge achievement. PlayStation users will recieve a gold trophy for this achievement.

Interestingly, Sebastian Sallow does not appear in the True Ending regardless of if you turn him in or not.
Only Ominis Gaunt appears, and he doesn't even jump up to cheer for the protagonist if they won the House Cup for Slytherin, even though Poppy or Natty will appear if the protagonist won the House Cup for Hufflepuff or Gryffindor, respectively. (It's almost as if the developers didn't want to make two versions of the cutscene, but let's just say they thought Sebastian had enough screentime already)
After either the Normal or Evil ending, you'll watch a cutscene with either Sebastian or Ominis depending on whether you complete Sebastian Sallow's questline, and if you did, what choice you made during the In the Shadow of Fate side quest.

In the ending where Sebastian appears, the protagonist tells Sebastian that it was actually Rookwood who cursed Anne, not the trolls. Though he struggles to believe it, he realizes that he may have been misguided in his blind hatred of trolls, and says he will think about it more in the future.
In the ending where Ominis appears, the protagonist tells Ominis that it was Rookwood who cursed Anne, so that Ominis can let Sebastian know. Later, in In the Shadow of Friendship, Ominis reports back that although he was able to tell Sebastian the truth, Sebastian had become too blinded by his bitterness, and his hatred of trolls only grew.
