Whether you kneel or attack, you will get the Graphorn Mount and proceed through the quest San Bakar's Trial Quest as normal. Since the choice doesn't affect progression, choose based on what kind of cutscene you'd like to see: more cinematic (kneel) or more action-packed (attack).
