Successfully viewing Constellations from Astronomy Tables reward you with the Starry-Eyed Seer Gear Appearances. This does not affect the stats of your current gear, so feel free to look as stylish as you want!
You can find the challenge and its rewards under Challenges > Exploration in your Field Guide.

How to Unlock Astronomy Tables
Complete Astronomy Class
You won't be able to interact with Astronomy Tables scattered around the map unless you have finished the Astronomy Class quest. If you have not unlocked the quest yet, progress the story until it's available.
You can only interact with Astronomy tables when it's night. Open the map and Wait (R3) to wait until nighttime.
