Flying Off The Shelves will be unlocked after completing the main quest Charms Class, where you unlock the spell Accio, which is needed for this quest.

Flying Off The Shelves Walkthrough

Objectives
1 Talk to Cressida.
Go to the Central Hall and talk to Cressida to begin this quest. You can find Cressida seated at the top of the northwest staircase of the Central Hall.

Hogwarts Legacy Flying Off the Shelves Books
Collect Cressida's flying books from the library.
Enter the library and use Accio to start collecting Cressida's books. There will be 3 books flying on the first floor and 2 books flying on the second floor.
3 Talk to Cressida.
Head back to Cressida and talk to her to finish this quest.

Ask for a 300 Gold Reward

When talking to Cresta at the end, you can select the Perhaps a reward - to keep the diary a secret. and Perhaps I'm not. dialogue options to earn 300 Gold. Selecting any other option will not give you any Gold.
