Defeat the enemies on the Battle Talus before taking it on, to make the fight much less chaotic and easier to handle. Using bows to pick them off from afar is a good strategy.

Some enemies will hurl Fire Fruit as grenades. In grassy areas, this can create updrafts you can use to fly upward with the Paraglider.
While in mid-air aim your bow to slow down time. This will make it easy to aim at the enemies' weak spots and take them down without wasting arrows.
Use Link's Ascend ability to phase through the planks and get up on top of the Battle Talus, allowing you to access its weak spot.

To make getting into position for ascent easier, try hitting the Black Rock on the Talus' back with an arrow. This will force the Battle Talus to kneel, allowing you to get under one of the decks or the Talus' waist to use Ascent.
If you have a powerful arrow attachment like a Bomb Flower, you will also be able to deal some extra damage to the Talus before even getting on top of it.
The black rocks growing out of the Battle Talus are its weak spots. Hit these to deal great damage to the Battle Talus. Keep on doing this in order to defeat it.
The Battle Talus will throw you off, if you hit its weak spot for too long. This doesn't do much damage, so land with your Paraglider and get back on to do more damage.
Do not stay directly under the Battle Talus for too long, as it will stomp on you, dealing massive damage that can instakill you. Keep your distance until you can find a good chance to use Ascend.
