Building things is a huge part of the game, side quest related Ultrahand items are missable upon completion. Such as bagpack Korok, Shrine crystal, Breezer, the Eyes, gears? cages?. So leave them be if you want cool parts for later, especially the Eyes, autobuild version does not have the cool colors.

Bosses are absolutely not missable, once you defeat them in the Temples they start spawning in arenas around the Depths.
