Talk to the Cursed Statue and tell it that you want to tamper with your essence.
Choose whether to sell your Heart Container or Stamina Vessel for 100 Rupees.
Once you're done selling your Heart Containers or Stamina Vessels, exit the dialogue with the Cursed Statue.
Talk to the Cursed Statue again and tell it that you want one of your essences back. The statue will also tell you how many essences it currently has that it can return to you.
Choose to return either a Heart Container or Stamina Vessel, which will cost 120 Rupees to return. When accounting for the 100 Rupees the statue takes and the 120 Rupees he receives to give back the essence, players will spend only a total of 20 Rupees for exchanging vessels.
Keep in mind that you can respec your hearts and stamina as many times as you want, provided that you have enough Rupees to do so.

The easiest way to unlock the Cursed Statue is to complete one Temple to unlock the side adventure associated with the statue in Lookout Landing.
After completing a Temple, talk to Jerrin in the Emergency Shelter in Lookout Landing to start the Who Goes There? side adventure.
Press the Left Thumbstick to crouch and enter the hole in the wall.
Use a Rock Hammer to destroy the breakable rocks. Breaking the large rocks also causes some rocks to drop, which you can infuse with your weapon if your original Rock Hammer breaks.
You may also destroy the rocks by throwing Bomb Flower at them, though make sure to keep your distance.
Talk to the Cursed Statue in the right side alcove of the underground path who will then demonstrate its powers by stealing one of your Heart Containers. This also starts the A Deal With the Statue side adventure, which you can complete after talking to the statue again.
Once you're done conversing with the statue, head back to Jerrin to complete the Who Goes There? side adventure.
Another way to unlock the Cursed Statue is to access the Royal Hidden Passage from Hyrule Castle. This method takes more time as you will need to break a lot of cracked walls to reach the statue's location.
Note: This method requires digging through several cracked rocks. It's a good idea to stock up on Rock Hammers and Boulder Hammers, as well as Bomb Flowers so you can easily clear the cracked rock walls.
Use the First Gatehouse in Hyrule Castle as a starting point. Head outside of the gatehouse and stand at the following coordinates: -0321, 0874, 0109
Drop down from the ledge and glide inside the hole in the wall to find a hidden entrance to the castle.
Head north until you reach a hallway with the gloom on the right side. Head left and enter the first door you see in the hallway.
Once inside, enter the small room on the left side of the area next to a box and the broken barrels.
Use your Ultrahand to grab and lift the metal grates off the floor, and then drop down the hole to enter the Royal Hidden Passage.
Follow the path underground and defeat the Black Horriblin. You may also open the nearby treasure chest to get a Soldier's Spear.
Head down the spiral staircase, defeating the Fire Chuchus along the way. Take note of the breakable cracked rocks at the end of the hallway and directly opposite of the spiral staircase.
Note: You can head up the spiral staircase to pick up a Diamond inside a treasure chest but prepare to face a lot of enemies.
Use a Rock Hammer or a Boulder Hammer to break the cracked rocks to arrive in an area with Luminous Rocks and Stone Pebblits.
Destroy the luminous rocks and proceed to the next area.
With your Rock or Boulder Hammer, continue breaking through the second set of cracked rocks. Stick to the right side of the area to avoid getting hit by the Shock Like's electric attacks.
After breaking the rocks, head down and turn left to find blue cracked rocks. Break them with your Rock or Boulder Hammer to proceed to the next area.
Once inside the small room, ignore the large pile of cracked rocks in the center as there is a Stalnox inside.
Instead, swim north and into the small opening to find another set of blue cracked rocks that you'll need to dig through.
Once you break the blue cracked rocks, the path to the statue is pretty straightforward but will require breaking several cracked rock walls.
The Cursed Statue is located on the left-side alcove before you reach the path heading to the Emergency Shelter. Talk to the Cursed Statue for a demonstration of its power and to start the short side adventure teaching you how to swap Heart Containers and Stamina Vessels.

You can find the Cursed Statue behind breakable rocks in the Royal Hidden Passage. You can access this area from the Emergency Shelter in Lookout Landing or from Hyrule Castle.
