There are no unlockables once you complete the main story of Tears of the Kingdom. All gameplay features can be played from the beginning and there are no major potential missables, so there is no need to rush to finish the story
Although this is not considered a post game content, there is a special cutscene in the True Ending that you can only see if you clear certain conditions.
