Get right under Stone Talus, then use Ascend to easily get on top of it, giving you access to its weak spot.
Note: Don't stay under Stone Talus for too long, as it will stomp on you.
Ascend Guide: How to Pass Through Ceilings

The glowing ore on its back is its weak spot. Hit it with melee attacks to deal great damage. If the Stone Talus throws you off, get back on with Ascend and repeat this process until it is defeated.
You can use Recall on the boulders thrown by Stone Talus to send it back to them in order to stun them.

Update: the only way to bypass this on mobile is to request the desktop site and use landscape orientation on full-screen map mode. The coords, photo, and "mark complete" window that appears when you tap a monster is too large to display in landscape mode, so I have to keep turning my phone back and forth. Really annoying and making me want to use a different map.
