The sneaky river snail will not freeze in a cold environment. You must freeze it with a freezing-weapon. I suspect that the developers didn't bother to make a dead version of the river snail, as it does not move when it is alive. I also think that creatures must first be dead to freeze by the environment. Thus, you must kill and freeze it at the same time.
