To access a schematic, equip the Autobuild ability by holding down the L button. If you don't have it, you need to unlock the ability first. Without this, you cannot access any of the builds you've created or any schematic collected.
Use the Zonai Devices lying around to build schematics or gather these devices from Zonai Dispensers found all around Hyrule.
If there are no Zonai Devices lying around and there's none in your inventory, you can still build these schematics using only Zonaites. Be sure to stock up as each schematic varies in Zonaite requirements.
