Cards to consider when building a Shark Deck is making use of WATER monsters that can Special Summon or can be Special Summoned easily to be able to have the materials to Xyz Summon. Cards like Xyz Remora, Double Fin Shark, Silent Sea Nettle and Tin Goldfish should make it easy to get monsters on the field as often as possible.
There's also additional support to consider like Beautunaful Princess, Dream Shark and Lifeless Leaffish, which despite having different Levels all synergize with one another. On top of that, the Spell Card White Mirror can Special Summon a Fish-type monster from the GY and search for a copy of the recycled card at the same time.

Special mention among the Main Deck options is Barrier Statue of the Torrent, which locks out both players out of Special Summoning non-WATER monsters. In this Deck, this can be a surprising floodgate against the opponent.
Other optional support cards can be of great help for this Deck. Rank-Up-Magic Barian's Force provides a bigger pool of Xyz Monsters that can be summoned via Rank Up, while Seventh Force provides an additional summon during the Battle Phase if you control a certain Xyz Monstre and its "Number C" counterpart.
Torpedo Takedown is a really versatlie card for the Deck, which does a little bit of everything: burn damage, an ATK boost, and drawing 2 cards.
With various Xyz Monsters of the same rank, an option for a more defensive play would be to go for Number F0: Utopic Future and then immediately going into Number F0: Utopic Draco Future, which comes with a negate against monster effects, and potentially even stealing the opponent's monster.
Another very viable option for the Extra Deck is Number 4: Stealth Kragen and Stealth Kragen Spawn, which turns all monsters on the field into the WATER Affinity--and then destroying WATER monsters the opponent controls. These two Xyz Monsters also come hand-in-hand, Special Summoning one another.
For more offensive power, a classic set of cards to run are the Utopia cards, specifically going with Number 39: Utopia Double, then eventually going for the win (and even an OTK) by doubling its attack with the help of *Double or Nothing!.
It also has its own Rank-Up variant in Number S39: Utopia The Lightning, which is another strong monster when it comes to battles.
Tellarknight Ptolemaeus having been unbanned a couple of updates ago, it's becoming a powerful option to run if the Deck can go into Rank 4 Xyz monsters. Climbing into Stellarknight Constellar Diamond, and then into Constellar Ptolemy M7 is a great way to get multiple materials into an eventual Divine Arsenal AA-ZEUS - Sky Thunder summon.

Floowandereeze has been a Deck that specializes in going up against Special Summon-centric Decks, using multiple Normal Summons and various floodgates to punish the opponent.

Various versions of Runick Decks are still a problem, even with numberous hits onto their Quick-Play Spells into the banlist, on top of the floodgates being affected as well. Most of these Decks are reactionary, however, thus making their gameplay reliant on how the Shark Deck player goes about their turn.

Right now, Snake-Eyes is the strongest Deck in the game with its unmatched card advantage and various ways of ending the game. Especially helped with the power of the Diabellstar engine, and various effects that turn monsters into Continuous Spells/Traps, it will be a rather uphill battle going against this Deck as an Armored Xyz Shark player.

Kaijus are already a troublesome archetype to deal with as a splashable archetype across many Decks, but against a full-fledged Deck, they will simply take advantage of the Special Summons by tributing them.
