You can get the W-870 Shotgun for free as early as Chapter 1. Once you get to the Village Square, head north and go up the second floor of the house near the tower and church, the shotgun will be mounted on a wall.
If you miss picking up this weapon, you can buy it at the Merchant starting in Chapter 2.

The Red9 can be found inside a small blue chest at the Lake after defeating Del Lago in Chapter 4. Players will need access to a boat before being able to travel to the Lake.
If you miss picking up this weapon, you can buy it at the Merchant starting in Chapter 5.

During Chapter 10, you'll find the CQBR Assault Rifle inside a Square Lock Box in-between two animal mounts just south of the Library.
You will need the Cubic Device which is obtained in Chapter 9 in order to open the Square Lock Box.
If you miss picking up this weapon, you can buy it at the Merchant starting in Chapter 11.

While progressing through Chapter 13, you can find the LE 5 inside a locked Freezer Room which requires you to solve the Electronic Lock Puzzle in order to power up the room and gain access to it.
If you miss picking up this weapon, you can buy it at the Merchant starting in Chapter 14.

The Gold Chicken Egg treasure/recovery item can also be used as a weapon/to deal damage against enemies. For example, 2 Gold Chicken Eggs are capable of totally depleting the health of the Salazar boss (1 Gold Chicken Egg to bring him to 2nd phase and another 1 to complete finish him off entirely).
However, the Gold Chicken Egg does not work on all enemies. For example, when thrown at an El Gigante or Armored Gigante, the Gold Chicken Egg won't deal massive damage.

To a lesser extent, Chicken Eggs also deal damage when thrown at enemies and bosses, but the damage dealt is very minimal, so it's best still used as a recovery item.
The Infinite Rocket Launcher is a weapon exclusively available in New Game Plus. It deals the same damage as a regular Rocket Launcher, but it has infinite ammo, making it a one-time purchase weapon that you can keep.
You can buy it for the lofty price of 2,000,000 pesetas (or 1,600,000 pesetas, if you have the Leon w/ Rocket Launcher charm equipped).

The Chicago Sweeper is an SMG that has an Unlimited Ammo exclusive upgrade. You can get the Chicago Sweeper by beating Professional mode with an A-rank and its exclusive upgrade can be purchased for 10,000 pesetas.

The Primal Knife is a knife that has the exclusive perk Indestructible,
which gives it unlimited knife durability. To get the Primal Knife, you need to destroy all Clockwork Castellans. Afterward, get its exclusive upgrade at the Merchant by using an Exclusive Upgrade Ticket or by fully upgrading it.

While not a weapon itself, Cat Ears are an accessory that, when equipped, will give all your weapons infinite ammo.
Secret Weapons are the weapons not normally found in a standard playthrough of Resident Evil 4 Remake. These weapons are either bought in the Extra Content Shop with CP, purchased only in New Game Plus, or are not immediately apparent as weapons/items that deal damage.
