There is another version of this fight that happens much later in the game and with another Gigante variant. Keep in mind that the same strategy applies for both fights.
How to Beat El Gigante |

|
If you helped the trapped dog from earlier, the good boy will join in shortly after the fight starts. He can draw El Gigante's aggro away from you and leave it open for free hits.
On one of the short cutscenes, he will even lure the giant into slamming itself on a wall, immobilizing itself for a while.
Should You Save or Kill the Trapped Dog?
The shacks around the arena contain lots of useful items including herbs, ammo, and crafting materials. Be sure to check them out when El Gigante is distracted if you need to resupply.
Don't worry about El Gigante tossing the shacks at you as the items will still be on their original spots where you can pick them up later.
If El Gigante starts charging at you or picking up a large object to throw, lower your gun and prepare to dodge. There will be prompts on the screen that you should follow to avoid these attacks.
El Gigante is just a much bigger villager that you can shoot whenever you want to deal damage. However, shooting its head seems to deal more damage and staggers it quickly.
After taking enough damage, the plaga—its weakpoint— will pop out from El Gigante's back, which you can shoot to deal even more damage.
It will be difficult to aim at the plaga while dodging El Gigante's attacks at the same time so it's better to keep shooting El Gigante until it's staggered to leave its weakpoint wide open.
You can also use Hand Grenades to deal damage on both El Gigante and the plaga. Just make sure to adjust the trajectory of your throw so the grenade explodes behind the giant!
The plaga also retains its weakness to Flash Grenades and will also receive heavy damage from them.
After staggering El Gigante, a melee prompt will appear where you will hop on to its back for a chance to knife the plaga. Keep mashing the knife button until you automatically jump down. Rinse and repeat.
Alternatively, if you have bullets to spare, you can pull out your Rifle and start shooting the plaga while the giant is down. If you have a Rocket Launcher somewhere in your attache case, you can also blow the thing up for massive damage—if not an instant win.

El Gigante can perform stomps and overhead smashes whenever it gets close to you or to the dog. Do a quick turn to run away from it or run sideways so you can go around it.
El Gigante can charge at you which you can dodge by following the on-screen prompt. Failing to do so takes a huge chunk off your health.
Another heavy attack from El Gigante is when it picks up one of the shacks in the arena and throws it at you. Back away from where it is and prepare to dodge.
